Vinification Details
After squeezing the bunches of de-stemmed grapes into a large stainless steel tank, the must is left to macerate for between 8 and 24 hours. Then the skins are separated by gravity and float to the top, whilst the wine full of natural sugar remains to the bottom .Whilst the two are in contact, the must is enriched by pigments from the grape skins and so turns pink and flavor precursors, which are found in grape skin extract, only if there is this maceration. After this is complete, so to the “bleeding” and separating the juice from the skins. The must is fermented at controlled temperatures between 12-15 º C. At the end of this the wine is prepared for bottling.
History
The winery name, Principe de Viana, literally means Prince of Viana which was a title bestowed on Carlos III of Spain’s grandson when he was born. This title was given to him in the same town, Tudela, where today the winery is located. The story was to take a twist of cruel fate as the Prince was denied his throne on the death of his mother with his father actually fighting a war against him, forcing him to flee Spain, travelling to Paris, Rome, Naples and Barcelona where he ended up living. His remains were burined here in Poblet where he became known as a hero and saint and defender of law and order. This legend was born in 1423.
