Sausage and bean stew

  1. Heat half tbsp olive oil in a lidded saucepan over a medium heat
  2. Add 2 finely sliced onions and fry for 6 mins
  3. Finely chop 1 large garlic clove; stir in and fry for 2 mins. Transfer to a plate and set aside
  4. Increase the heat to medium high, add half tbsp olive oil and 8 frozen sausages
  5. Cook for 5 mins until browned all over
  6. Return the onion and garlic to the pan with 400g tin tomatoes and 2 tsp Dijon mustard
  7. Add ½ chicken or vegetable stock cube, season with pepper and cook over a medium heat for 10 mins
  8. After 5 mins, adding 420g tin baked beans
  9. Stir through the 100g sliced spring greens, cover and cook for 4-5 mins more
  10. Wait until the sausages are cooked through and the spring greens are tender
  11. Serve with mash, if you like
