Quality beef from the UK

The UK has some of the greatest welfare standards in the world for producing beef. Our climate is also ideal – around 65% of UK farmland is best suited to growing grass for livestock. Altogether, this means we can bring you plenty of high-quality cuts of British and Irish beef.

What's the best cut of steak for me?

Sirloin

Sitting somewhere between rump and fillet in terms of taste and texture, sirloin steak has the perfect balance of fat and tenderness. Cook in a similar way to ribeye, allowing the fat to melt into the meat.

Ribeye

Ribeye is an incredibly rich and tender cut. It's known for its marbling of fat, which adds plenty of flavour. When cooking ribeye, it’s usually recommended to cook until at least 'medium', to give the fat time to melt down and baste the meat.​

Rump

This classic steak cut may not be as tender as others but it packs a ton of flavour. Rump is great for skewers, as it takes on marinades very well. It can also be sliced very thinly and used in dishes like stir-fries, which are cooked fast and hot.

Fillet

'The king of steaks' – fillet steak is incredibly tender and contains very little fat. This means​ it should be cooked quickly over a high heat, to prevent the meat from drying out. But you can use larger cuts in dishes such as beef Wellington, which are cooked in the oven for longer.​

How to cook steak in 4 easy steps

Take a look at our cooking tips and sizzle on each side for: 3–3.5 mins for rare, 3.5–4 mins for medium rare, 4–5 minutes for medium, or 6 minutes for well done

Step 1: don't cook cold steak

Get the steak out of the fridge about one hour before cooking and let it come up to room temperature

Step 2: seasoning 1

Rub the steak with a little oil and season with salt only at this point – pepper will burn

Step 3: start sizzling

Use a heavy-based frying pan or griddle. ​Cook at a high temperature for the first minute, then reduce the heat to medium. Turn occasionally.

Step 4: seasoning 2

Add a knob of butter, a garlic clove and some herbs. Spoon the butter over the steak. After cooking, leave it to rest and sprinkle with black pepper.​
