Vinification Details
The grapes were pressed and the juices settled for 48 hours before being racked and fermented in stainless steel tanks at a controlled temperature between 16-18°c. The wine was then left to stand on thin lees for additional flavours and there was no oak barrel ageing.
History
Thierry Boudinaud is a winegrower and talented winemaker based in the South of France. His local reputation and contacts give him access to some of the most exciting wines produced in the Languedoc. His familiarity with the people, vineyards and climate coupled with a wealth of winemaking experience all over the world means that he can create bespoke wines.

The Languedoc is in the South of France, not far from the Mediterranean sea. Soils are a mix of sand and clay. The vines for this wine are aged between 10 and 24 years.
