Tropical green breakfast smoothie

This brightly coloured smoothie is a great way to start the day, and sets you well on the way to getting your five-a-day. Kale adds wonderful vibrancy while coconut and pineapple give this smoothie a deliciously tropical taste.

Ingredients

  • 40g (1 1/2oz) tender-leaf kale
  • 200ml (12fl oz) pineapple juice
  • 125g (4oz) pineapple chunks
  • 1 banana, peeled and sliced
  • 3 tbsp low-fat coconut yogurt
  • 1 tbsp honey or agave syrup

Method

  1. Put the kaleandpineapplejuice in a blender and blend until smooth.
  2. Add the remaining ingredients and blitz until really smooth.
  3. Check the consistency - if it’s a little thick, add a splash more pineapple juice or some water and blend again.
  • TIP: If you can’t find coconut yogurt or you already have plain yogurt in the fridge, mix 2 tablespoons yogurt with 1 tablespoon desiccated coconut instead.
