- 1 scoop of lemon sorbet
- 2 tbsp fino sherry
- 75ml cava, chilled
- silver edible glitter spray, to serve

Method
- Put a scoop of lemon sorbet in the centre of a chilled coupe glass. Top with the fino sherry, then slowly pour in the chilled cava around the edges of the sorbet.
- Spray with silver edible glitter spray to serve.
- Tip: If catering for a crowd, scoop the sorbet ahead of time and place on a plate or baking tray in the freezer for speedy assembly.
