- 270g pack pineapple chunks
- 250g pack mango pieces
- 2 limes, zested and juiced
- 4 tbsp caster sugar
- 120ml dark rum (or elderflower cordial)
- 20g fresh mint, leaves picked and finely chopped

- Toss all the ingredients together in a bowl, cover and leave to sit at room temperature for 1 hr (or overnight for a stronger flavour) until the fruit has softened and is sitting in a syrupy liquid.
