Mojito fruit skewers

Simple, sweet and boozy, these mojito fruit skewers are guaranteed to wow the crowd. If you're planning a beach picnic, make sure to pack these as your dessert of choice – you won't regret it!

Ingredients

  • 6 kiwis, peeled, each cut into 8
  • 270g pack pineapple chunks
  • 250g pack mango pieces
  • 2 limes, zested and juiced
  • 4 tbsp caster sugar
  • 120ml dark rum (or elderflower cordial)
  • 20g fresh mint, leaves picked and finely chopped

Method

  1. Toss all the ingredients together in a bowl, cover and leave to sit at room temperature for 1 hr (or overnight for a stronger flavour) until the fruit has softened and is sitting in a syrupy liquid.
  2. Strain, reserving the liquid for the Arnold Palmer recipe, if you like, and thread the fruit onto skewers. Will keep, covered, in the fridge for up to 3 days.
