Mini balti pizzas recipe

These mini pizzas are made using delicious naan breads and a medley of Indian-inspired ingredients, from mango chutney to Bombay potatoes – a delicious party treat that's the ideal Christmas party food.

- 1 x 250g pack Bombay potatoes
- 2 x plain naan breads
- 85g grated Cheddar
- chopped red chilli
- pomegranate seeds
- chopped fresh coriander
- yogurt or raita, to serve

- Preheat the oven to gas 7, 220°C, fan 200°C. In a bowl, stir the mango chutney into the Bombay potatoes, halving any large pieces. Spread over the naan breads, leaving a small border.
- Top with grated Cheddar and a little chopped red chilli. Bake for 15 minutes, until melted and golden.
- Remove and leave to cool for 2 minutes, before scattering over pomegranate seeds and chopped fresh coriander. Cut into bite-size squares and serve with yogurt or raita.
