Chorizo and Gruyère puffs recipe

A rich and warming savoury treat to share with friends and family this Christmas. Get ahead with these delicious cheesy bites, which can be made well in advance and chilled for up to three days or frozen for up to a month.

Ingredients
- 75g (3oz) butter
- 110g (3 3/4oz) plain four
- 3 medium eggs
- 75g (3oz) Gruyère, diced
- 75g (3oz) skinless chorizo, cooked and diced

Method
- Preheat the oven to gas 4, 180°C, fan 160°C. In a pan, combine the butter, 175ml water and ½ tsp salt. Bring to the boil, remove from the heat and stir in the flour until smooth.
- Return to a medium heat and beat for 1 minute. Remove from the heat and leave for 1 minute. Beat in the eggs, one at a time, until glossy, add the Gruyère and chorizo. Season with black pepper.
- Spoon 2cm balls of the mixture onto 2 greased baking trays. Bake for 30 minutes, or until puffed and golden. Pierce to allow the steam out. Serve warm.
