- Preheat the oven to gas 6, 200°C, fan 180°C. Place the potatoes, onion wedges and thyme leaves on a large baking tray or dish. Drizzle over the olive oil, season and toss to combine. Arrange the sausages on top, then bake in the oven for 20 mins.
- In a small bowl, mix the marmalade and soy sauce with ½-1 tbsp warm water until it’s a drizzling consistency. Pour over the sausages and potatoes and return to the oven for 15 mins.
- Meanwhile, make the topping. Melt the butter over a medium-high heat in a frying pan and add the marmalade, chilli, garlic and thyme. Cook for a couple of mins before stirring in the breadcrumbs. Fry for 5 mins until the breadcrumbs turn golden. Set aside, the mixture will crisp up as it cools.
- Add the spinach to the sausages and potatoes and return to the oven for 5 mins to wilt. Stir it in amongst the veg.
- Serve in bowls with the crispy ‘marmalade on toast’ topping.
