Loaded taco bowls recipe

Little ones will love this mild-spiced Mexican-style taco bowl made with lean turkey mince, wholegrain rice, black beans and veggies. It's a healthy kids lunch idea that's fun to eat too.

Ingredients
- ½ tbsp olive oil
- 1 garlic clove, finely chopped
- ½ onion, finely chopped
- 200g 2% fat turkey breast mince
- ½ tsp paprika
- 250g microwave wholegrain rice
- 100g black beans, drained and rinsed
- 60g tinned sweetcorn, drained
- ½ medium avocado, thinly sliced
- ½ lime, cut into 4 wedges
- 5g flat-leaf parsley, finely chopped

Method
- Heat the oil in a medium frying pan over a medium heat and cook the onion for 5 mins. Add the garlic and cook for a further minute before stirring through the turkey mince and paprika and cooking for 5 mins, breaking the mince up as you stir.
- Meanwhile heat the microwave rice according to pack instructions.
- Divide the rice between two bowls, then spoon in the turkey mince, black beans, sweetcorn and avocado. Serve with lime wedges and a scattering of parsley to garnish.
- Tip: Can be made with meat or veggie mince. The bowl ingredients can be substituted to your favourites or whatever you have in your fridge – jalapeños, shredded lettuce, cubed beetroot, chopped tomatoes, top with sour cream or grated cheese.
