Kids' Sloppy Joes recipe

Take lunch to the next level with this cheesy Sloppy Joes recipe; soft white bread rolls filled with veg-packed beef mince and Cheddar cheese. The lunch is top notch plus there's a chance to get a bit messy, is there anything that kids love more?

Ingredients
- ½ tbsp vegetable oil
- 250g (from 500g pack) 5% fat beef mince
- ½ red onion, finely chopped
- 2 garlic cloves, finely crushed
- 1 celery stick, finely chopped
- ½ carrot, finely chopped
- 2 tbsp tomato purée
- 1 reduced-salt vegetable stock cube, made up to 100ml
- 2 white batch rolls, sliced in half
- 30g grated lighter mature cheese
- 30g wild rocket
- 8 cherry tomatoes

Method
- Heat the oil in a large frying pan over a medium heat. Add the mince, onion, garlic, celery and carrot and fry for 5 mins until the mince is cooked through.
- Stir in the tomato purée and stock, bring to the boil and simmer for 5 mins until thickened.
- Fill the rolls with the mince and top with the Cheddar and rocket. Serve with cherry tomatoes on the side.
