Gluten-free apple granola bars

These scrumptious gluten-free granola bars are jam-packed full of apples, oats and dried fruit and make a delicious snack the whole family will enjoy.

Ingredients

  • butter, for greasing
  • 300g (10oz) peeled and roughly chopped apple
  • ½ tsp ground cinnamon
  • 3 tbsp brown soft sugar
  • 110g (3 3/4oz) Free From porridge oats
  • 110g (3 3/4oz) ready to eat dried prunes
  • 110g (3 3/4oz) raisins, roughly chopped
  • 3 tbsp peanut butter
  • 4 tbsp clear honey

Method

  1. Lightly grease a 20cm square tin. Preheat the oven to gas 4, 180°C, fan 160°C. Toss the apples with the cinnamon and sugar in a large mixing bowl, then spread out on a baking sheet and roast for 10 mins. Remove from the oven and set aside.
  2. Put the oats, prunes, raisins, peanut butter and honey into a food processor and pulse a few times to mix and mash the mixture. Spoon into the prepared cake tin roughly, then spoon over the roasted apple and press into the mixture. Bake in the preheated oven for 15 mins. Remove from the oven and set aside to cool for 15 mins before cutting into 9 squares to serve.
