Gluten-free fig and pecan nut bars

Ingredients

  • 200g pecans
  • 250g dried figs
  • 100g dried dates
  • pinch sea salt
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 orange, zested

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C.
  2. Place the pecan nuts on a tray in the oven and roast for about 3-4 mins until a shade darker and aromatic, being very careful not to burn. Remove and leave to cool completely. (Alternatively you can use the pecans raw if you prefer, they will not taste quite as nutty as when roasted).
  3. Place the pecans and the remaining ingredients in a food processor. Blitz until everything is very finely chopped and sticks together.
  4. Put the mixture into a 16 x 20cm rectangular tin and press down firmly until flat and smooth. Refrigerate for at least 1 hour, then cut into 12 bars. Keep refrigerated in an airtight container.
