Ingredients

  • 150g (5oz) pitted dates
  • 3 tbsp clear honey
  • 50g (2oz) rolled oats
  • 50g (2oz) hazelnuts
  • 50g (2oz) almonds
  • 150g (5oz) mixture dried fruit, chopped into bite-sized pieces
  • 2 tbsp flaxseed
  • 1 tsp ground cinnamon

Method

  1. Put the dates in a bowl, then pour over enough boiling water to cover. Leave for 30 minutes until softened, drain, reserving the water. Place the dates in a food processor along with the honey and 3 tbsp of the soaking water. Whiz until smooth.
  2. Preheat the oven to gas 4, 180°C, fan 160°C.
  3. Stir together the date mixture with the remaining ingredients and a pinch of salt, if liked, until the mix just holds together. Add a little extra water if necessary. Line a 20x20cm (8x8in) baking pan with baking paper. Press the mixture inside. Bake in the oven for 20-25 minutes until firm and golden. Leave to cool in the tin for 5 minutes, then remove and use a sharp knife to cut into 10 bars. Leave to cool completely. Will keep in an airtight tin for up to 5 days.
  • Tip: Experiment with dried fruit flavours – apricot, cranberry, currants dried pears, apples and raisins all work well.
