Gluten-free granola

Hearty and full of crunch, this wholesome breakfast granola will fill you up and keep your energy levels high all the way through to lunchtime. Honey, syrup and vanilla lend a sweetness to the baked oats, which combined with the tart berries and juicy raisins gives a delicious breakfast idea that's perfect for both gluten-free and nut-free diets.

Ingredients

  • 2 tbsp vegetable oil
  • 100ml maple syrup
  • 4 tbsp honey
  • 1 tsp vanilla extract
  • 200g (7oz) gluten-free oats
  • 225g (7 1/2oz) bag Tesco Wholefoods berries and raisins

Method

  1. Heat oven to gas 2, 150°C, 130°C fan. Mix the oil, maple syrup, honey and vanilla in a bowl. Stir in the oats to coat well. Spread out the oaty mixture on a large baking tray and bake in the oven for 30 minutes.
  2. Add the berries and raisins to the mixture and bake for another 5 minutes. Leave to cool, before breaking up and storing in a jar.
