Cherry and mascarpone tarts recipe

These Mediterranean-style tartlets are a real taste of summer, topped with lemon and honey mascarpone and thyme-infused cherries. Using ready-made pastry keeps things easy, and they come together in just 20 minutes (plus cooling). Serve for afternoon tea or as an easy, elegant summer dessert.

- 320g pack ready-rolled shortcrust pastry
- 1 egg, beaten
- 3g fresh thyme, leaves picked
- 200g fresh cherries, pitted and halved
- 1 tbsp icing sugar
- 250g pack mascarpone
- 1½ tbsp clear honey
- 1 lemon, zested

- Preheat the oven to gas 6, 200°C, fan 180°C. Unroll the pastry and cut into 6 equal-sized rectangles. Lay on a baking tray lined with baking paper. Score a 1cm border around each rectangle and use a fork to prick the centres a few times. Brush with the beaten egg. Bake for 15 mins until lightly golden. Leave to cool completely.
- Meanwhile, finely chop half the thyme and mix with the cherries and icing sugar; set aside to macerate, stirring occasionally.
- Whisk the mascarpone with 1 tbsp honey and the lemon zest until smooth. Spread across the middle of each tart, right to the borders. Top each tart with the cherries and juices. Drizzle with the remaining honey, then scatter over the remaining thyme and a pinch of salt.
- Tip: The pastry, cherries and sweetened mascarpone can be prepared and stored separately up to a day ahead of assembling.
