Blueberry cheesecake bagel

Toasted bagels, topped with a sweet cream cheese, a ginger biscuit crumb and fresh blueberries, make a luxurious addition to afternoon tea – or a sumptuous weekend breakfast.

    Ingredients

    • 1 bagel, sliced in half
    • 90g 50% less fat cream cheese
    • 25g icing sugar
    • 80g blueberries
    • ½ lemon, zest only
    • 2 ginger biscuits, crumbled

    Method

    1. Toast the bagel halves until golden.
    2. Stir together the cream cheese and icing sugar until thick and smooth.
    3. Crush 50g of blueberries with a fork and stir through the thickened cream cheese with the lemon zest. Spread this on to each bagel half and top with the remaining blueberries. Finish with a sprinkle of the ginger biscuit crumbs.
