Cheesy French toast bagel with crispy bacon recipe

Try an American spin on classic French toast with this cheesy bagel recipe for one, topped with crisp streaky bacon and a drizzle of maple syrup.

Ingredients
- 3 rashers unsmoked streaky bacon
- 1 large egg
- 1 tbsp milk
- 20g Gruyère cheese, finely grated
- 1 bagel, sliced in half
- 10g butter
- 1 tsp maple syrup

Method
- Cook the bacon in a dry frying pan over a medium heat for 2-3 mins each side until crispy. Take off the heat and keep warm.
- Whisk the egg, milk and cheese in a bowl together and season. Dip both bagel halves in the egg mix and leave to absorb for 30 seconds, then flip and soak the other side.
- Heat the butter in a large pan. Fry the bagels, cut side down, for 2-3 mins over a medium heat until golden. Flip on to the other side and cook for another 2 mins.
- Serve on a plate topped with the bacon and drizzled with maple syrup.
