This milkshake-style, non-alcoholic drink made with juicy strawberries and creamy coconut is perfect for summer. Serve it in pretty glasses at a BBQ or simply whip up as a refreshing breakfast smoothie.

Ingredients

  • 400g (13oz) strawberries, hulls removed
  • 1 x 400ml tinned coconut milk
  • 1 tbsp honey
  • 2 tbsp dessicated coconut

Method

  1. Slice the strawberriesin half. Place them ina plastic containeror resealable bagand freeze for 2 hours, until frozen but not too solid.
  2. Put the strawberries in a blender and whizz with the coconut milk, honeyand desiccated coconut. Divide between chilled glasses.
