Whip up pancakes with just bananas and eggs: use 1 large egg per banana.
Add ¼tsp bicarbonate of soda to the flour, and ¼tsp cider vinegar to the milk. This will give you the necessary rise.
Substitute milk for a plant based alternative, like almond or oat milk. You can even use coconut milk to add flavour.
Use oil to fry the pancakes rather than butter – you'll only need a small amount for each pancake
