Traybake pancakes with smashed berries recipe

We all love pancakes, but you don’t have the time to be standing over a pan while your toddler is running about. This simplified traybake version has a lovely fluffy texture and is a total winner with toddlers. It’s lovely served warm or cold, on its own or with yogurt and berries.

- Takes 40 minutes, plus cooling
Ingredients
- 50g unsalted butter, melted, plus a little softened butter for greasing
- 250g self-raising flour
- 1 tsp baking powder
- 1 tbsp mixed seeds
- 1 large ripe banana, mashed
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- 220ml whole milk
- 150g mixed berries, roughly mashed with a fork, plus 50g, roughly chopped, to serve
- 100g full fat Greek yogurt, to serve

- Heat the oven to gas 5,190°C, fan 170°C. Grease and line a 20cm square baking tin with non-stick baking paper. In a medium bowl, stir the flour, baking powder and seeds together. In a separate bowl, whisk the butter, banana, egg, vanilla and milk together until well combined. Pour the wet ingredients into the dry ingredients and fold together until just combined.
- Pour into the prepared baking tin and smooth the top. Dot with the mashed berries then swirl through with a spoon. Bake for 25-30 minutes until risen and springy to the touch. Allow to cool for 10 minutes before slicing into bars and serving with the remaining chopped berries and yogurt.
- Tip: You can cook this in an air-fryer but if it has a small basket bake this in two batches. Cook in a lined tray for 12-15 mins or until lightly golden and springy.
- Tip: Any leftover pancakes will keep in an airtight container in the fridge for up to 2 days and can be microwaved to warm through for a snack or another breakfast.
