Method

  1. Purée half the strawberries with 1 tbsp of water in a food processor. Scoop out the passion fruit pulp and add half of it to the coulis. Sweeten to taste with a little of the honey if necessary. Thinly slice the mint leaving a 4 leaves whole for garnish.
  2. Layer up in glasses or jam jars; some sliced strawberries, mint, yogurt, coulis, honey, passion fruit repeating until all the ingredients are used up. Finish with granola and garnish with the whole mint leaves.
  3. Try topping with some crushed nuts and dried fruits instead of granola.
  4. Use a flavoured yoghurt such as coconut and layer up with sliced banana and chunks of pineapple. Top with desiccated coconut
  5. : Layer up fresh pitted cherries with cherry coulis, natural yogurt flavoured with a little honey and almond extract and then top with toasted flaked almonds and extra honey.
