Stir-fried chilli greens

This vegan Indian side dish is perfect for sharing on curry night. Ready in under 15 minutes, this vibrant stir-fry of greens and peas has a real kick from fresh chilli and ginger.

Ingredients

  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 red chilli, seeded and finely chopped
  • 1 green chilli, seeded and finely chopped
  • 1 tbsp finely chopped ginger
  • 450g sliced greens
  • 100g frozen peas, defrosted
  • ½ lemon, juiced

Method

  1. Heat the oil in a lidded frying pan set over a medium heat. Add the cumin and mustard seeds, sizzle for 1 min, then add the chilli and ginger and cook for 30 secs.
  2. Add the greens, peas, 3 tbsp water and a pinch of salt. Cover and cook for 5 mins. Drizzle with lemon juice to serve.
