Asian greens

Whip up this Asian-inspired side in just 10 minutes. Stir-frying pak choi brings out a nutty flavour that works really well with iron-rich spinach and sesame seeds. You can make the flavours pop even more by seasoning the dish with a little light soy.

Ingredients

  • 1 tbsp sesame seeds
  • 1 tbsp groundnut oil
  • 1 garlic clove, finely sliced
  • 250g pack pak choi, quartered
  • 200g pack spinach
  • 1 tsp toasted sesame oil

Method

  1. In a dry wok or frying pan, toast the sesame seeds over a medium heat, stirring frequently until golden. Tip the sesame seeds onto a plate and set aside until needed.
  2. Return the pan to a medium-high heat and add the groundnut oil and garlic. Cook for 30 seconds, or until the garlic is just beginning to sizzle, then add the pak choi and stir-fry for 1-2 minutes.
  3. Add the spinachwith 1 tbsp water and stir-fry for 1-2 minutes, until the spinach has just wilted; season. Drizzle with sesame oil and scatter the sesame seeds before serving.
