- Coarsely grate 2 apples into a bowl. Mix in the vanilla extract, 1 tbsp maple syrup, 100g Greek-style yogurt and milk. Stir through the chia seeds and divide among 4 glasses. Cover and chill for 8 hrs or overnight in the fridge.
Meanwhile, slice the remaining apple into thin wedges. Melt the butter in a frying pan until bubbling, then add the apple slices and cook for 5 mins, turning regularly, until golden. Pour in the remaining 1 tbsp maple syrup and stir to coat for 2 mins until sticky. Store overnight in a sealed container in the fridge.
- When ready to serve, top each pot with 1 tsp Greek-style yogurt and the sticky apple slices.
- Get ahead: Keep the pots in the fridge, covered, for up to 3 days.
