This chia seed pudding makes a great make-ahead breakfast, flavoured with apple, maple syrup and vanilla, combined with milk and Greek-style yogurt. Prep it the night before and store in the fridge for up to 3 days. Add the sticky apple topping just before serving for a little extra indulgence. It’s a balanced option too, providing calcium and 1 of your 5-a-day.

Ingredients

  • 3 British apples
  • 1½ tsp vanilla extract
  • 2 tbsp maple syrup
  • 100g Greek-style yogurt, plus 4 tsp to serve
  • 350ml milk
  • 80g chia seeds
  • 15g butter

Method

  1. Coarsely grate 2 apples into a bowl. Mix in the vanilla extract, 1 tbsp maple syrup, 100g Greek-style yogurt and milk. Stir through the chia seeds and divide among 4 glasses. Cover and chill for 8 hrs or overnight in the fridge.
  2. Meanwhile, slice the remaining apple into thin wedges. Melt the butter in a frying pan until bubbling, then add the apple slices and cook for 5 mins, turning regularly, until golden. Pour in the remaining 1 tbsp maple syrup and stir to coat for 2 mins until sticky. Store overnight in a sealed container in the fridge.

  3. When ready to serve, top each pot with 1 tsp Greek-style yogurt and the sticky apple slices.
