Spicy singapore noodles

    Ingredients

    • 2 tbsp groundnut oil
    • 1 onion, halved and cut into thin wedges
    • 2 tsp each minced garlic and ginger
    • 1 fat red chilli, deseeded and cut into thin strips
    • 1 red pepper, cored, deseeded and cut into thin strips
    • 2 tsp mild curry powder
    • 1 tsp turmeric
    • 225g turkey lean breast mince
    • 4 tbsp soy sauce
    • 325g (11oz) fresh singapore noodles
    • 4 spring onions, trimmed and thinly sliced
    • 160g cooked & peeled King prawns with chilli and coriander
    • 2 medium eggs, beaten

    Method

    1. Heat the oil in a large wok or frying pan and fry the onion for 2 minutes until softened. Stir in the minced garlic,ginger, chilli, red pepper, curry powder and turmeric and stir-fry for 1-2 minutes. Add the mincedturkeyand soy sauce and stir fry for 3 minutes, breaking the mince down with the back of a wooden spoon ensuring it is cooked through.
    2. Add the noodles, spring onion and prawns and stir fry for 2-3 minutes until warmed through. (you may need to add a 1-2tbsp water at this stage if the noodles dry out a little) Push everything to one side of the pan and pour the beaten egg into the other side - cook stirring until scrambled. Stir well to combine all the ingredients and serve immediately with lime quarters to squeeze over.
