Spicy beef gochujang noodles recipe

A twist on bibim-guksu, the cold Korean noodle dish, these sweet and spicy beef noodles make a flavour-packed dinner for two. Made with a clever flavour kit, they're ready in just 25 minutes, making them perfect for busy weeknights when you want something a little special that's still easy to prepare.

Ingredients
- 2 tbsp olive oil
- 1 onion, finely diced
- 1 red pepper, finely diced
- 250g beef mince
- 300g straight to wok udon noodles
- 1 pack Tesco Gochujang Noodles Flavour Kit
- 2 eggs
To serve (optional):
- fresh coriander
- red chillies, finely sliced
- spring onions, sliced

Method
- Heat 1 tbsp of oil in a frying pan, add the onion and red pepper and fry for 2 minutes.
- Add the beef mince and fry for 10 minutes, until browned and cooked through.
- Add the udon noodles with 150ml water and the paste from the flavour kit. Mix well until evenly combined and cook for 2 minutes, or until the noodles are cooked through.
- Pour the cooked noodles into a bowl. Heat the remaining 1 tbsp of oil and fry the eggs until the white is opaque and yolk is runny.
- Serve the noodles topped with a fried egg and drizzled with the seasoning sauce from the flavour kit. Garnish with the fresh coriander, red chillies and spring onions, if you like.
- Simple swaps: Swap the udon noodles for egg noodles, add in veggies of your choice, or make it vegetarian by swapping the beef mince for a meat-free alternative.
