Smoked mackerel with kiwi salsa

Ingredients

  • 4 kiwis, cut into chunks
  • 1/2 small mango, cubed
  • 1 red chilli, deseeded and finely chopped
  • 1 lime, juiced
  • 1 tsp fish sauce
  • 1 tbsp chopped fresh coriander
  • 1 x 70g pack rocket
  • 4 smoked mackerel fillets, halved

Method

  1. Put the chopped kiwi and mango in a bowl. Combine the red chilli with the lime juice, fish sauce and coriander. Pour over the fruit and set aside for 20 minutes to allow the flavours to develop.
  2. Divide the rocket leaves between 4 serving plates and top each with 2 mackerel halves. Spoon over the kiwi and mango salsa to serve.
