These Greek-inspired meatballs are a great way to bring bold Med flavours to a simple midweek meal. Made with lean pork mince, smoked paprika and fresh dill, they're cooked in the air-fryer for maximum ease. Served alongside crispy risotto rice and a vibrant salad of spinach, peas and tomatoes, it's a fresh, colourful meal that will bring a little sunshine to your table.

Ingredients

  • 150g risotto rice, rinsed
  • 10g fresh dill, chopped
  • 1 lemon, ½ juiced, ½ cut into wedges
  • 1 tbsp vegetable oil
  • 1 wholemeal batch roll
  • 500g pack 5% fat pork mince
  • 1 egg, lightly beaten
  • 1 tsp smoked paprika
  • 150g frozen peas
  • 125g cherry tomatoes, quartered
  • 15g fresh mint, leaves picked
  • 100g baby spinach
  • 75g Greek-style salad cheese, crumbled (optional)

Method

  1. Cook the rice in boiling water for 10-11 mins until just cooked. Drain, rinse briefly with cold water, then drain again.
  2. Line your air-fryer with a silicone or paper liner (or baking paper). Add the rice and half the dill and drizzle with the lemon juice, oil and some seasoning. Stir well and air-fry at 200°C for 12-15 mins until golden and crisp. Remove the cooked rice (with the liner) and set aside.
  3. Meanwhile, blitz the batch roll to make breadcrumbs. Tip into a bowl and add the pork mince, egg, smoked paprika, remaining dill and some seasoning. Mix well and shape into 12 balls.
  4. Cook the keftedes in the air-fryer at 200°C for 7-10 mins until cooked through. Meanwhile, boil the peas for 3 mins until tender; drain. Mix the cooked peas with the tomatoes, mint, spinach and cheese, if using.
  5. Serve the keftedes nestled into the crispy rice, alongside the tomato salad and lemon wedges to squeeze over.
