Kofte bites with minty yogurt recipe

These bitesize kofte pair tender lamb, zesty coriander and mint, with a little added heat from garlic and cumin. Serve with a refreshing minty dip as part of a comforting Indian feast.

Ingredients
- 500g pack lamb mince
- 1½ tsp ground cumin
- 2 tsp ground coriander
- 2 garlic cloves, crushed
- 2 tbsp mint leaves, finely chopped
- 1½ tsp olive oil
For the herb yogurt
- 150g low-fat natural yogurt
- 2 tbsp mint leaves, chopped
- ½ garlic clove, crushed
- ¼ tsp cumin seeds, toasted and crushed
- 2 tsp lemon juice

Method
- In a large bowl, mix all the kofte ingredients (except the oil). Season, then shape into 12 equal balls. Flatten slightly with the palm of your hand, then set aside on a plate.
- Mix the herb yogurt ingredients in a bowl, season to taste, then set aside in the fridge.
- Preheat a griddle pan over a high heat. Pour the oil over the kofte on the plate and roll so that they are lightly coated. Cook for 8-10 mins, turning halfway, until cooked through and browned all over. You might have to do this in batches. Serve warm with the herb yogurt for dipping.
- Tip: To toast spices, dry-fry in a frying pan over a low heat, stirring, until just fragrant, then remove from the pan.
