Ingredients

  • 100g bunch spring onions, trimmed
  • 500g pack pork belly slices, cut into 2.5cm chunks
  • 4 tbsp reduced-salt soy sauce
  • 1 tbsp clear honey
  • 1 tbsp mirin
  • 1 garlic clove, grated
  • 2cm piece fresh ginger, peeled and grated

Method

  1. If using wooden skewers, soak in water for 30 mins before using. Preheat the grill to medium-high. Alternatively, light a barbecue and wait until the flames have died down and the coals are glowing white.
  2. Cut the spring onion whites into 2.5cm pieces and finely slice the green tops for garnishing. Thread the pork belly and spring onions whites onto skewers and arrange on a foil-lined baking tray.
  3. Whisk the soy, honey, mirin, garlic and ginger together in a bowl. Pour a quarter of the mixture into a second bowl for basting; set aside. Brush the skewers all over with the main marinade. Grill or barbecue for 15-20 mins, brushing with the reserved marinade and turning after 10 mins, until cooked through and sticky. Serve drizzled with any roasting juices and scattered with the spring onion greens. Discard any leftover marinade.
