Orange marmalade fizz

Marmalade and clementines lend this prosecco Christmas cocktail a gorgeous citric-sweetness. Add to festively decorated glittering glasses for the most wonderful Christmas party idea. Get ahead by chilling the prosecco and making the marmalade mixture a day in advance. If it jellifies on cooling, simply reheat it to loosen.

Ingredients

  • 5 tbsp marmalade
  • 4 clementines, juiced
  • smooth orange juice, to decorate
  • edible glitter, to decorate
  • 8 tbsp triple sec
  • 2 bottles prosecco, chilled (you may have a little left over)

Method

  1. In a small pan, gently heat the marmalade with the clementine juice until it liquefies. Pass through a small sieve into a jug, using a metal spoon to help. Discard the residue and set the jug aside to cool.
  2. Decorate 8 Champagne glasses ready for serving: spoon a little orange juice onto a plate and dust a second with edible glitter. Dip the rims of the glasses in the juice, then twist to coat in the glitter. Set aside.
  3. Put 1 tbsp triple sec into each glass, then divide the marmalade mixture between them. Top up with prosecco and sprinkle a little more glitter over the surface, if you like.
