Moroccan chicken and cauliflower one pot

    Method

    1. Preheat the oven to gas 5, 190°C, fan 170°C. Put the rice, onion, cauliflower, garlic, spices, orange zest and juice, dried fruit and kale into a large, shallow ovenproof dish. Drizzle over 1 tbsp oil, season with black pepper, then mix. Pour over the stock and put the chicken on top. Drizzle over the remaining oil and cover.
    2. Cook in the oven for 20 mins. Remove the lid, then cook for a further 35-40 mins, until the rice is tender and the chicken is golden and cooked through.
