Lemongrass mojitos

The fragrant, citrus flavour of lemongrass goes beautifully well with mint and rum. Use the lemongrass stalk as a stirrer in this delicious mojitos.

Ingredients

  • 2 sticks lemongrass, bases trimmed
  • 3½ tbsp light brown sugar
  • 2 limes, cut into wedges
  • handful mint leaves, plus 2 sprigs to serve
  • 75ml white rum
  • soda water, to top up the glasses

Method

  1. Remove the tough outer layers from the lemongrass. Finely chop the bulbous parts and reserve the stalks.
  2. Divide the chopped lemongrass, sugar, lime wedges and mint leaves between 2 tall glasses and use the end of a rolling pin or a wooden spoon handle to muddle (mash) the ingredients together, releasing their flavour.
  3. Divide the rum between the glasses, muddle again, then fill up with crushed ice and top up with soda water. Stand a lemon grass stalk and a mint sprig up in each glass then serve the mojito.
