Leek and feta breakfast bites recipe

These breakfast bites are more like egg muffins — and a little bit special, if we say so ourselves. Sweet roasted leeks contrast beautifully with zesty lemon, fragrant spring onion and tangy feta. The ultimate grab-and-go breakfast or elevenses snack — a dream to make, and eat.

Ingredients
- 500g leeks, trimmed, rinsed and finely sliced
- 2 tbsp olive oil
- 12 large eggs, beaten
- 1 lemon, zested
- 30g pack fresh flat-leaf parsley, finely chopped
- 2 spring onions, finely sliced
- 75g feta, crumbled
- tomato chutney (optional)

Method
- Preheat the oven to gas 4, 180°C, fan 160°C and line a 12-hole muffin tin with squares of baking paper. Add the leeks to a baking tray, toss with the oil and season. Roast for 15-20 mins until crispy at the edges. Remove from the oven and cool slightly.
- Meanwhile, whisk the eggs with the lemon zest, parsley, spring onions, most of the feta and a generous pinch of seasoning, then stir in most of the leeks.
- Divide the mixture among the lined muffin holes, top each with a little of the remaining feta and leek, then bake for 15 mins until the frittatas are puffed up, lightly golden and just set. Serve with a spoon of chutney, if you like.
