Gochujang and honey bring a ‘swicy’ (sweet-spicy) kick to these chipolata hot dogs. Grilled or barbecued, they work in any weather and are perfect for a speedy midweek treat or more relaxed weekend eating. A quick radish and spring onion pickle adds extra oomph (prep it the day before, if you like) with everything tucked into a soft, buttery brioche roll. One seriously special hot dog!

    Method

    1. Heat a grill to medium-high or light a barbecue and wait until the flames have died down and the coals are glowing white.
    2. Meanwhile, mix the vinegar and sugar with a generous pinch of salt until the sugar and salt have dissolved, then add in the radishes and spring onion whites and stir to coat. Set aside to pickle while you make the hot dogs.
    3. Mix 2 tbsp gochujang and the honey together until well combined. Cook the sausages under the grill or on the barbecue for 10 mins, turning regularly, then brush with the gochujang mixture and cook for another 1-2 mins until sticky and cooked through.
    4. Spoon some pickled radishes into each hot dog bun followed by 2 chipolatas and sprinkle over the sesame seeds. Top each with another spoonful of pickled radishes and the spring onion greens and coriander. Mix the mayonnaise and remaining 1 tbsp gochujang together, then drizzle over the hot dogs.
    • Tip: Make the pickled radishes up to 24 hrs in advance and keep in a non-metallic bowl in the fridge.
