Ingredients

  • 1 medium wholemeal loaf, cut into 6 x 1 inch thick slices
  • 100g goat's cheese, divided into 6 even portions
  • 2 large vine tomatoes, sliced into discs
  • sprigs of basil leaves
  • salt
  • black pepper

Method

  1. Pre-heat the grill to hot.
  2. Toast the sliced bread for 2-3 minutes on each side until lightly coloured. Spread the goat's cheese evenly onto the toasted bread and season with black pepper. Top each with a slice oftomato, then season with salt.
  3. Return to the grill for 1 minute, then transfer to a wooden serving platter. Garnish with each with a sprig ofbasilleaves. Serve immediately.
