Strawberry gummy snacks

All the fun of gummy sweets, but completely guilt-free. This healthy take on fruity gummy snacks uses fresh strawberries and runny honey to give all the natural sweetness you need. Enjoy these as a satisfying afternoon snack.

Ingredients

  • 400g (13oz) strawberries, trimmed and chopped
  • 2-3 tbsp runny honey
  • 1 lemon
  • 1 x 12g pack powdered gelatine

Method

  1. Tip the strawberriesand 50ml (2fl oz) water into a saucepan. Cook over a gentle heat for 3–5 minutes, until the berries begin to burst, skimming away any froth that rises to the surface. Then whiz in a food processor until a smooth sauce forms. Stir through thehoneyand a squeeze of lemon juice, to taste. Pass through a thin sieve, discarding the seeds, then measure out 300ml (1/2 pint) of the strawberry juice.
  2. Meanwhile place the gelatinein a bowl and pour over 5 tbsp cold water. Leave until the liquid has been absorbed. Place the bowl over a pan of boiling water. Remove from the heat and leave for 5 minutes until the gelatine has dissolved. Then stir into the strawberry juice and mix well. Pour into a lightly oiled 20x20cm (8x8in) baking tin. Place in the fridge for 3 hours or overnight until solid. Turn out onto a board, then use a small cookie cutter to stamp out shapes or cut into small squares.
  • Tip: For something different, use orange, mango or cranberry juice.
