Classic coleslaw

Cabbage, onion and carrot are shredded and then coated in a creamy dressing spiked with a little mustard and vinegar, making for a truly fabulous coleslaw - the perfect burger side!

Ingredients

  • ½ red cabbage, shredded
  • ½ savoy cabbage, shredded
  • ½ red onion, finely sliced
  • 1 carrot, grated
  • 2 tbsp mayonnaise
  • 4 tbsp natural yogurt
  • 2 tsp Dijon mustard
  • ½ tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp cayenne pepper
  • handful chives, finely chopped

Method

  1. Put the cabbage, onion, carrots and red onion in a large bowl.
  2. In a smaller bowl, combine the mayonnaise, yogurt, mustard, olive oil, vinegar, cayenne pepper and chives. Season well with salt and pepper, then pour onto the vegetables. Toss to combine, then serve.
  • Tip: You can make this ahead and cover with clingfilm and refrigerate for up to 2 days before serving.
