Chermoula recipe

A North African marinade, chermoula is made with fresh herbs, warm spices, garlic and lemon. It’s particularly delicious with fish, but also great with chicken, meat and veg. The herbs add plenty of flavour as well as creating that vivid green colour. Short on time? Skip the marinating and use the chermoula as a dressing instead.

Ingredients

  • 30g fresh flat-leaf parsley
  • 30g fresh coriander
  • 2 garlic cloves, peeled
  • ½ lemon, juiced
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 4 tbsp extra-virgin olive oil
  • ¼ tsp salt
  • ¼ tsp cayenne pepper
  • ice cube

Method

  1. Add the parsley, coriander, garlic, lemon juice, paprika, ground cumin, olive oil, salt and cayenne pepper to a high-powered blender with an ice cube and blend until smooth.
  2. Pour over your protein (salmon works well here), cover and chill in the fridge for at least 2 hrs or up to 24 hrs.
  • To serve: This recipe is for the marinade only, so don't forget to buy your protein (we like salmon with this marinade).
    • Food safety: Never use a marinade that has been in contact with raw meat or seafood without thoroughly cooking it, as it can contain harmful bacteria.
