Avocado and Greek yogurt ice lollies recipe

- 1 large, ripe avocado, halved and stoned
- 1 lime, juiced
- 3½ tbsp clear honey
- 150g 0% fat Greek yogurt
- 1 tsp vanilla extract (optional)

Method
- Prepare 6 x 100ml lolly moulds and 6 lolly sticks, and make sure there's enough space cleared in the freezer to hold the moulds upright.
- Scoop the avocado flesh into a blender with the lime juice, honey and 2 tbsp water. Blend until smooth, then stop the motor, scrape down the sides and add the Greek yogurt and the vanilla extract, if using. Blend again until completely smooth.
- Divide between the lolly moulds and insert a lolly stick in the centre of each (the mixture will be thick enough to hold them in place). Freeze for at least 4 hrs, or overnight, until completely solid.
- To remove the lollies, dip the outside of the moulds in boiling water for a few seconds and gently pull on the sticks to release.
- Tip: Use a teaspoon to safely scoop out the stone.
