Vegan strawberry ice lollies recipe


Cool down this summer with this easy vegan strawberry ice lolly recipe. Creamy coconut milk and fresh strawberries are blitzed together for a pretty vegan dessert that everyone can enjoy.

Ingredients
- 400ml coconut milk
- 50ml maple syrup
- 1 tsp vanilla extract
- 180g strawberries, hulled

Method
- Put the coconut milk, maple syrup, vanilla and strawberries in a blender and blend until smooth.
- Divide the mixture between 8 x 80ml ice lolly moulds, insert lolly sticks and freeze for 4-5 hrs or until firm.
- To remove the lollies, run the moulds briefly under hot water, then twist and gently pull them out.
- Tip: Swap the ingredients for what you have to hand: honey can be used instead of maple syrup, or use Greek yogurt instead of coconut milk (but the ice lollies will no longer be vegan).
