Ingredients

  • 400ml coconut milk
  • 50ml maple syrup
  • 1 tsp vanilla extract
  • 180g strawberries, hulled

Method

  1. Put the coconut milk, maple syrup, vanilla and strawberries in a blender and blend until smooth.
  2. Divide the mixture between 8 x 80ml ice lolly moulds, insert lolly sticks and freeze for 4-5 hrs or until firm.
  3. To remove the lollies, run the moulds briefly under hot water, then twist and gently pull them out.
  • Tip: Swap the ingredients for what you have to hand: honey can be used instead of maple syrup, or use Greek yogurt instead of coconut milk (but the ice lollies will no longer be vegan).
