Warming dhal with sweet potato dippers recipe

This flavoursome dhal is the ideal meal for feeding the whole family. Toddlers will love the mix of subtle, warming spices and creamy texture, and adults can add fresh chilli and herbs at the end for a hit of punchier flavour. Serve with sweet potato wedges for dipping, or flatbreads would be a tasty alternative.

Ingredients
- 1 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 tbsp frozen chopped ginger
- 1 tbsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 large sweet potato, peeled and chopped into 1cm pieces
- 2 tbsp tomato purée
- 300g red split lentils, rinsed
- 400ml tin light coconut milk
- 400g tin chopped tomatoes
For the sweet potato dippers
- 2 large sweet potatoes, cut into 2cm wedges
- 1 tbsp vegetable oil

- Preheat the oven to gas 6, 200°C, fan 180°C. Put the sweet potato wedges onto a large baking tray and toss in the oil. Bake for 20 mins, then turn and bake for another 15 mins until lightly golden and soft in the middle.
- Meanwhile, heat the oil in a large, lidded casserole dish or deep nonstick saucepan or frying pan. Fry the onion for 7-8 mins until soft and lightly golden, then add the garlic, ginger and spices for another 1 min before adding the sweet potato and tomato purée for another 1 min, turning well to coat. Add the lentils, coconut milk, chopped tomatoes and 1½ tins of water from the chopped tomatoes tin. Stir well, add the lid and cook for 30-35 mins, stirring regularly until the lentils and sweet potato are soft and have absorbed most of the water. Freeze half for another time or freeze in small portions for emergency toddler dinners. Serve with the sweet potato dippers or rice.
- Tip: The dhal can be made in the slow-cooker on medium for 7-8 hrs or until the liquid has been absorbed and the lentils and sweet potatoes are soft.
