These tuna burgers are made with tinned tuna, making them budget-friendly and easy to throw together. Flavoured with zesty lemon and fresh dill, they're cooked in the air-fryer for a fuss-free midweek meal that's packed with flavour. Served in wholemeal rolls with homemade sweet potato fries, they're simple, satisfying and feel like a treat!

Ingredients

  • 5 wholemeal batch rolls
  • 3 x 145g tins tuna chunks in brine, drained
  • 1 lemon, zested
  • 10g fresh dill, finely chopped
  • ¾ tsp smoked paprika
  • 6 tbsp light mayonnaise
  • 60g gherkins, 1 finely diced, the rest sliced
  • 3 tsp vegetable or rapeseed oil
  • 2 sweet potatoes, cut into 1cm-thick chips
  • 1 Little Gem, shredded

Method

  1. Tear up 1 bread roll and blitz in a food processor to make breadcrumbs. Add to a bowl with the tuna, lemon zest, half the dill, ½ tsp smoked paprika, 3 tbsp mayonnaise, half the diced gherkin and some seasoning. Stir together, then shape into 4 patties, about 8cm in diameter.
  2. Lightly drizzle the tuna burgers with 1 tsp oil and rub all over to coat, then cook in an air-fryer at 200°C for 8-10 mins until cooked through. Remove to a plate, cover and keep warm.
  3. Toss the sweet potatoes with the remaining oil and some seasoning. Arrange in an even layer in the air-fryer and cook at 160°C for 15 mins. Shake the tray, then increase the temperature to 200°C and cook for another 5 mins until browned.
  4. Meanwhile, mix the remaining mayonnaise and smoked paprika with the reserved finely diced gherkin and dill. Split the remaining rolls, spread the cut sides with the mayonnaise, then fill each roll with a tuna burger, some gherkin slices and shredded lettuce. Serve with the fries.
