All week Tina and her family are out and about – whether it’s school, work, swimming, football or after-school clubs. But now the week’s over. It’s Sunday, the day Tina gets time together with her family, which they all love. Especially when they share a warming Sunday dinner – Tina serves her homely garlic and thyme roast dinner recipe. Her two children can’t even wait for it to be put on the table before sneaking a Yorkshire pudding.

    Ingredients

    • 2 onions, 1 cut into wedges, 1 sliced
    • 6 garlic cloves, unpeeled
    • 600g pack skinless and boneless chicken thigh fillets
    • 6 thyme sprigs
    • 1 tbsp olive oil
    • ½ x 800g pack Aunt Bessie’s Roasties
    • ½ x 500g pack Aunt Bessie’s Honey Glazed Parsnips
    • 15g butter
    • 1 tsp sugar
    • 1 tbsp plain flour
    • 1 beef stock cube, made up to 450ml
    • 220g pack Tenderstem broccoli
    • 8 Aunt Bessie’s Golden Yorkshires

    Method

    1. Preheat the oven to gas 7, 220°C, fan 200°C. Spread out the onion wedges, garlic, chicken and 3 sprigs of thyme in a large roasting dish. Drizzle with the oil and season. Scatter over the Aunt Bessie Roasties and Honey Glazed Parsnips and roast for 20 mins.
    2. Meanwhile, melt the butter in a saucepan over a medium heat and add the sliced onion. Cook, stirring occasionally, for 10 mins to soften. Finely chop the remaining thyme sprigs and add to the pan with the sugar. Cook for 5 mins until golden brown.
    3. Stir the flour into the onions, then add the stock gradually, stirring continuously to get rid of any lumps. Once all the stock is added and the gravy is smooth, turn the heat down and simmer gently until thickened to your liking. Keep warm.
    4. Stir the broccoli into the roasting dish, then return to the oven for 10 mins.
    5. Stir the dish again, then top with the Aunt Bessie’s Golden Yorkshires. Cook for 5 mins or until the Yorkshires are crisp. Serve with the onion gravy.
    • : Beef stock adds a rich flavour to the gravy, but you can use chicken stock instead, if you like.
