Craving something fresh but still packing a punch? These Thai-style lettuce cups (larb) are it – high in protein, brimming with flavour, and on the table in 20 minutes. Make it your own by swapping in chicken, pork or vegan mince, and dial up the heat with extra hot chilli crunch, if you like. Sharing platter or sofa grazing session — either way, this dish delivers.

Ingredients

  • 1½ tbsp vegetable oil
  • 1 echalion shallot, finely diced
  • 500g pack 2% fat turkey breast mince
  • 3 tbsp green curry paste
  • 1 lime, halved, half in wedges
  • 1 tsp rice wine vinegar
  • 10g fresh coriander, leaves picked and chopped
  • 250g pouch microwave jasmine rice or leftover cooked rice (or 100g dried rice, cooked)
  • 2 Little Gems, leaves separated
  • 2 spring onions, finely shredded
  • ⅓ cucumber, quartered lengthways and fnely sliced
  • 25g salted roasted peanuts, chopped
  • 1-2 tbsp chilli crunch (we used Blue Dragon mild kick; you can use extra hot if you prefer)

Method

  1. Heat the oil in a frying pan on a medium heat; cook the shallot, stirring, for 3 mins. Add the mince and fry, breaking up with a wooden spoon until golden; about 5 mins. Stir in the curry paste; continue to cook for 2 mins more. Pour in 50ml water and bubble for 2-3 mins. Squeeze over ½ a lime, the rice vinegar and most of the coriander.
  2. Meanwhile, heat the rice to pack instructions or until piping hot throughout. Stir through the remaining coriander.
  3. Fill the lettuce ‘cups’ with the rice, turkey mince, some spring onions, cucumber and peanuts. Top with chilli crunch and serve with lime wedges for extra zing.
  • Tip: Swap turkey for chicken, pork or vegan mince if you prefer. Freezer bags of Plant Chef meat-free mince are great to have on standby because you can cook it straight from frozen.
