Spicy sausage pizza with hot honey recipe

Take Friday night pizza to a new level. Top ready-made bases with this homemade batch-cook tomato sauce, jarred artichokes and fennel-flavoured sausage. Finish with a good drizzle of sweet and spicy honey.

Ingredients
- 4 tbsp honey
- 1 tsp Tabasco
- 350g sausage meat
- 1 tsp fennel seeds
- 4 pizza bases or flatbreads
- 200g homemade tomato sauce
- 1 jar antipasti artichoke halves, drained (optional)
- pinch of chilli flakes
- 200g pizza mozzarella, sliced
- rocket, to garnish

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Mix together the honey and Tabasco. Add more if you prefer a spicier honey!
- In a medium pan, fry the sausage meat with the crushed fennel seeds over a medium-high heat to cook for about 5 mins. Use a wooden spoon to break the sausage meat up into chunks as it cooks.
- Lay the pizza bases or flatbreads on a baking tray and divide the homemade tomato sauce between them. Top with the spicy sausage meat, artichokes, if using, and then a sprinkle of chilli flakes and the sliced mozzarella. Bake for 5-8 mins until cooked.
- Serve, topped with rocket and a drizzle of hot honey.
